Love me some Lomo Saltado. It's not that hard to make, and I highly recommend making some Aji sauce to go with it. Also super easy to make and that shit is like crack. You can use it on all kinds of things!!I am getting ready to try my hand at Loma Saltado. It is getting crazy how much Peruvian restaurants want for the once more affordable dish. The Aji may be a bit tricky.

My Filipino neighbors would slice certain ones up and make a ceviche style with Ponzu sauce. But other kinds had to be boiled to eat.
