So I’m going to make some sea cucumber. Anyone here have any experience with that odd creature? I’m all eyes.

I’m also looking for ideas on milk fish.

I am getting ready to try my hand at Loma Saltado. It is getting crazy how much Peruvian restaurants want for the once more affordable dish. The Aji may be a bit tricky.
Love me some Lomo Saltado. It's not that hard to make, and I highly recommend making some Aji sauce to go with it. Also super easy to make and that shit is like crack. You can use it on all kinds of things!!

I just made Pollo Saltado a few weeks ago.

My Filipino neighbors would slice certain ones up and make a ceviche style with Ponzu sauce. But other kinds had to be boiled to eat.

Here's a video of a guy I follow back in the 808 trying to make it himself for the first time.

I ended up throwing these things out. I just didn’t like the looks of them. I tasted one and it honestly had ZERO flavor. Not good, not bad, not fishy, just zero flavor. I decided it wasn’t worth the work.

I noticed your guy was less than impressed. He ended up with something he considered a 5/10. I’m thinking I’ll pass unless I can get my hands on some fresh Alaskan red. I understand that stuff tastes like abalone.
