Eggs and scrapple.

I love biscuits and gravy but that's like a heart attack on a plate.

I live in Missouri and I hired a guy a few years back that was from New Jersey and he always talked about it. Sounds like one of those disgusting sounding dishes that taste great. Lol

Growing up in Rhode Island at a time when there wasn't a Mexican restaurant for hundreds of miles, so far as I knew... I'd never seen or had a breakfast burrito.

About 25-30 years ago, I changed jobs and we had a contractor working there, from my previous company. Naturally, we hung out a bit and went to breakfast on occassion. I'd typically get eggs, bacon, toast - or some combination. He almost always got the breakfast burrito.

I didn't know what I was missing. That is one of my goto breakfasts now!!

I struggle with the idea that it has to cool in a pan to solidify before being cooked. I feel like maybe it's crispy outside and soft inside? I would def try it. But it's so foreign to me.

Scrapple is a Pennsylvania-Dutch food, kind of Amish stuff.
I've never had or prepared it, although I've heard it's tasty
Now other Jersey specialties, Corn, Tomatos, Pork Roll, Pizza, Bagels, Diners etc.... I'm your guy lol

My kids and I love it, but you need to get it from a good source. The kind you get in the grocery store isn’t very good. We have great butcher just outside of town and he makes the best scrapple I’ve eaten. I once ordered it a diner in Durango Colorado and it was comparable to what we buy.

When it comes to Breakfast ... much like real estate ... it's Location, Location, Location.

Down South, well-made Biscuits and Gravy are well worth the very real risk of a heart attack.

In New York, if you can find well-made Corned Beef Hash (with eggs poached or over-easy but not scrambled) you have found a slice-of-heaven.

A well-made English Breakfast ... in England ... is amazing.

I would love to find a well-made Pennsylvania Dutch Scrapple, and will look for it when next in PA.

As a life long resident of NYC, there are very few good locations for corned beef hash. Unless you have a recommendation (my favorite is EJ's on the Upper East-side ... but only on weekends), the better alternative is the simple classic Bacon, Egg and Cheese on a round roll ... served at most NYC Diners, Delis and Bodegas
... it is an excellent option at most locations.
