Ingredients: Cornstarch, salt, cayenne pepper, chili powder, egg whites, coconut flakes.. For Dip, Sour cream, pina colada drink mix, crushed pineapple (canned), granulated sugar
Make sure shrimp are Peeled and Deveined. In a bowl, mix: 1/3 cup cornstarch, 1 tsp salt, 1/2 tsp cayenne pepper, 1/4 tsp chili powder. Have 2 or 3 egg whites in another bowl, and you're gonna want to set the shrimp on something like grill sheet/tray- something you could throw on the grill but that has holes in it so the smoke can move go through it. First dip shrimp in starch mixture , then egg whites, then place on tray. You can either sprinkle on the coconut or roll the shrimp in it. Put it on the smoker at 225, depending on size of the shrimp varies cooking time - but usually large shrimp was about 20-30 minutes. I'd suggest using cherry woodchips for sweet flavor, but you should play around with a few (apple was interestingly good too)
Dip: Combine 1/2 cup sour cream, 1/4 cup pina colada mix, 1/4 cup crushed pineapple, 2 tablespoons sugar.
