Let the games begin. Bought 2 choice Tri Tips last night and put them in the bags today. I decided on choice as it is a lesser quality than either certified Angus or Prime and I'm trying to see the full effects of these bags over time. That and it was on sale for 3.99 per pound. :evil:

My plan is to try the first one after 25 days. Depending on the outcome, I will determine the time on the other. I want to get to 40 days if these things actually work.

I forgot to take pictures or post on the 25 days. I seasoned and then put in my smoker - which flamed up a bit and put too much of a char on it. It was good but not spectacular. Still a little tough - but it was only a choice tri-tip.

So here is 44 days and then put in sous vide at 127° for 4 hours. Next I will season with my steak seasoning and sear in the oven. Oven is set for 500° with my 14" cast iron.

I didn't actually end up trimming. I'm going to guess I lost about 10% or less water weight but of course I didn't weigh it before or after.

Once I sous vide it, there didn't seem to be a need. Guess we'll see.

This is it resting just after I took it out.

I will say that my next thing to try is a whole Angus top sirloin. But I'm going to do it for at least 90 days. That should be awesome!

I'll post again after I cut into this tri-tip.

OK... So 44 days vs 25 days? Wow! This tri-tip is tender, the "crust" is amazing, and the flavor is HUGE with its beefiness. Totally impressed.

Interestingly, the fat tastes just like bone marrow.
